Those are some nice knives.  I took a look at the Kershaw "Shun" series.  Pretty neat stuff.

I'm not a chef, I'm a professional geek, ex military. I do like good cutlery though. I do my best when prepping food for home use. I drooled over the Shun stuff, but I got 8 of these for $400 as a good starter.

I love Henckels knives.  I only have one right now but it does the job.  Years ago I recommended them to my mom and she has a few.  When I visit I have to sharpen them.

Henckels are good knives. I have 3 Shuns myself. A 4in parring knife, 7in santoku and 8in chef's knife. Best knives I've ever used. I'm inclined to get a few MACs and Globals to compare.

I need* a Santuko.  Bought myself a Wusthof hollow-ground carving knife for Thanksgiving, but a Santuko is next on my list.  I love Shuns.  Gorgeous knives, and scary sharp.  Beyond my budget, though.  Also, I don't like the round handle shape, although I have heard newer ones have a D-shape so you don't lose control when your hands get slippery.

If you get a japanese style/edged knife..get these things-

1000/3000/6000 grit waterstones
Stone Corrector
A copy of "The chef's edge" from Korin.com

Japanese knives do not sharpen by the same method as western knives. The video will explain all.

Wusthof 10 piece set in dark wood box
8 steak knives (Wusthof Classic X50 Cr Mo V15 - 4068-1/12cm)
1 carving knife (Wusthof Classic X50 Cr Mo V15 - 4524/20cm)
1 meat fork (Wusthof 4413/18 cm)

Have you looked up the cost on that set?  Thats some good stuff.  When I was hunting knives for kitchen use I handled and looked at a few of the brands listed here, simply amazing.  

If anyone is so inclined hit the archives and search for kitchen or knives with me as the starter, there was a HUGE thread about many brands listed here, and some other high end cutlery.

I have a fine set of kmart knifes that will rust if left in water.

With a quick diamond rod sharpening they will cut my finger off and then slice thru the badest tomato skin science can produce. (science has produced the thicker tomato skin)

I understand wanting nice shit but I'd rather make an extra truck payment.

I got a set of some noname sharp as fuck knives from TJMaxx for $20 with them, they work good enough for my cutting

Yeah mine have the D shape grips. My friend was tooling around with them one day. He wanted to see how sharp it was, so he threw a mushroom in the air and hit it mid-air with the knife. Or so he tought. The mushroom didnt seem affected, beside being knocked back in the sink. Then the mushroom hit the bottom of the sink and split in half, the cut perfectly defined. No ripping or bruising or anything.

By the way, the Santoku is probably my go-to knife. Seems its the one I use the most.

Got the wife one of these for Christmas....



It's the ten inch chef's knife from Shun.  And to the doubters it is really a matter of your prioities.  You can get a cheap set from Kmart or TjMaxx and get by just fing for your entire life unless you are a chef you never "NEED" a $130 piece of fine cutlery but if you have one you would definately appreciate it especially if you cook as much as my wife does.  I am sure the same guys who say they do just fine with their Kmart knives have spent hundreds if not thousands on worthless pieces of kit for weapons that they really don't need or could get by with something cheaper.

Exactly.  Think Wilson/Nighthawk/Baer/etc.  Few shooters can make use of the difference, but pride of ownership is valuable.

Throw 'em in the dishwasher and use the grinder on the back of the can opener.

If you keep them clean and sharp in this manner, they will cut open a package of hot dogs and lunchmeat like you wouldn't believe.
