I downloaded a video file today, and the entire thing is in individual "hefty" files.  Specifically, the files are labeled hefty-ee.r48 down to hefty-ee.r00, with a few others labeled differently.  What type of codec is required to view the files, and is there a way to simply convert to AVI or Mp4?

You have to "unzip" them first.  Technically, its the "rar" compression.  Download winrar to extract the files.

They're not"hefty"! They're "Big Boned".

So, what happens when I use one of the above mentioned programs?

Winrar should extract the multiple files into one usable video file.

The files labled .r00-r* are compressed, and split.  Winrar combines all the small .r00-type files and spits out the contents into (probably) one big file.

OK, I've downloaded the trail version of WinRAR, but have no idea how to use it.  The individual files are saved on a disc, so how do I use the program to convert them?

After you have installed winrar, open windows explorer and find all your hefty.r00-type files.  Double click any one of them (its best though to start with either r00, or better, one named .rar if it exists)

Windows might ask what you want to open the files with.  Pick winrar.  Winrar will then open.  Simply click the "Extract to" icon on the top left, and tell it where to dump the contents.  The default answer it suggests is fine.

ETA: you said they are saved on a disc.  If you mean floppy/cd/dvd, then when winrar asks you where you want to extract the files, you need to pick somewhere on your hard disk.

Open winrar, go to file, open archive, browse to the folder where the multiple files are located, and select the archive it finds, click open,
then the  extract to button, and choose where you want the video file, then OK. it should take a few minutes to extract.
