I had most of my very big family over for Thanksgiving.  I was in charge of the main dishes.  The turkey, stuffing, corn, etc, are easy.  What makes my Thanksgiving Day dinner popular, is my mashed potatoes.

There really is no substitute for hard work.  You put in your time, you get awesome tater-goodness.  Ingredients:

-20 lbs of Idaho's finest (you can never have too much)
-2 quarts Half-n-Half (didn't use any of the third in the pic below)
-1 lb butter
-2 large Vidalia Onions




Before doing anything, cut up the onions, then completely mince in a small food processor.  Slowly simmer for a few hours in one pound of melted butter in a small pot.  You want this to be liquid onion-butter.

Peeling the taters sucks, but it's worth it.  Once peeled, cut them into pieces and boil until soft.  I made so much, I had to divide them into two pots to mash.  Once manually mashed, add one quart of half and half to each, and whip with a mixer.

Divide the onion-butter equally between the two pots, and whip some more.  Combine the whole mess together, and add salt and pepper to taste.

The onions provide a delicate flavor that can make the mashed potatoes stand alone.  It all tastes even better with turkey gravy.  I make about a gallon of that.  You can never have too much gravy or mashed potatoes, to go with the left overs.

Nope.  I used 12 packets of commercial gravy mix, added four cans of turkey broth, and the turkey drippings.  It turns out OK.

OK...generally a dinner like that would score low points from me...

But, mashers are good; yours are nicely whipped (smooth looking), nice pistol...

I'm giving you a solid 5.654...that is a gift....

There was a 20 lb turkey, dressing, corn, sweet potatoes, rolls, pies, etc.

The mashed potatoes are the hard work, so it's what I took a pic of.
