I could see where it does look a bit odd/scary. It's actually part of a breast cut open and fitted w/ a slice of Swiss cheese, slice of portobello mushroom, and topped w/ a spinach mix. It's really good.

Also - single guy checking in here...is there any particular technique to doing this, or just try to butterfly the breast, and go from there?

I'll give you a 9.
Just a suggestion, but next time, place the chicken breast between two pieces of saran wrap, insert mag into XD(unloaded, or use mallett), pound breast flat, sautee mushrooms and other ingedients in olive oil. Wilt spinach in the same pan, and place ingredients on chicken breast/swiss cheese. Roll it up and brown it in the same pan you cooked mushroom/spinach mixture til just browned. Don't discard the remains in the sautee pan. Place chicken breast (roulade) in 350 deg. oven. Just before the chicken is done (15 to 20 mins), make yourself a sauce with whats left in the sautee pan......get the pan hot and deglaze with wine(maybee rum). Throw in some real butter, heavy cream, and swiss cheese, turn theheat down to a simmer until the sauce coats the back of a spoon, plate it up and go to town!
