Sun tea is too weak for my taste.

I brew with 3 family size bags in 2 qts of near boiling water and add a little sweetener.

I used to make it in a gallon (?) glass container. Put it outside in the sun for several hours. Sweeten to taste. Tasted awesome. I need to do it again this summer.

Sun tea is a really good way to get fecal coliform bacteria, too.

When you make tea the regular (right) way, the water is hot enough to kill the bacteria.  With sun tea it is not.

In Iraq, we'd get the little single serving tea bags and put 2-4 in a big bottle of water and throw it out on top of the A/C for a day or two.

This is about how I do it.  I put 2-3 family size bags in a gallon container that is sorta made for making sun tea, it has a spout on the bottom.  After it sits outside for awhile, I bring it in and put a little over a cup of sugar in it.  It is good.

I brew a gallon every other day.

I use 13 bags of decaf Luzianne tea ( I thinkt hat this is the best for Iced Tea). Then, I throw in one bag of Chai tea.

Many love the taste and always ask what the backround is - even folks who don't like Chai (Ginger, Clove, Anise, Cinnamon, etc.) like it when it is a distinct, yet backround, flavor.

I love Iced Tea and homebrew! Mmmmmmm!

California Sun tea:

1 gallon glass container.  Don't use plastic.  Only Nancy boys worried about dropping it use plastic.  Real tea-baggers use glass.

6-8 regular tea bags  Whatever knid you have.  Lipton, etc.

Trade secret  Get a box of flavored tea.  Doesn't matter if Bigelow, Celestal Seasonongs, etc.  Flavor is wharever you like, or wanna try.  I like to get a "sampler" pack cause I get bored of the same flavor.  Use 2-4 bags

Water  I use tap water cause I trust the local government.  You can use bottled of you're scared.

Add one gallon water to the jar.  Add in tea bags.  Let sit in sun for 6-8 hours in a sunny spot.  You'll have one gallon of sun tea.  Added over a large cup of ice, and drink up.  Sun tea is weaker than normal Iced tea, but so what.  One gallon will only last a day or so in the fridge, so drink it quick.

Ok, here are my old family recipes for sun tea.

You fill up the sun tea jar, (which is usually one of those ones that's about a gallon with the spigot at the bottom) with water, add four regular sized tea bags and set it in the sun.  You'll know when its done.

This one is from the deep south.  I don't like it, its WAY too sweet for me.

First, we make simple syrup.

In a large pot, boil just over a half gallon of water.  When it comes to a boil, add sugar.  You want to add right around 3/4 of a lb of sugar.  You'll have to stir like a madman to be sure not to burn the sugar before it can dissolve.  Stir and boil until you cannot see any sugar in the water.  Let cool.

Add the simple syrup that we've just made to the sun tea pot, fill half way and fill with water the other  half.  Add 4-6 teabags and leave in the sun.

Too weak for me too.  I like my tea almost as dark and strong as my coffee.    You only get that with boiling water and pure ceylon tea.

I wonder what the magical temp is.  Today I placed my gallon jar in the direct sun where the thermometer was reporting a 140 degree reading.  Yeah, the thermo was not reading the ambient temp, but would be nice to know what the real temp of the water was.  I'd bet it was hotter than the surround air and such.
