I just recently began using the various Zatarains box mixes for dinners and the famn damily thinks they (most of 'em anyway) are just incredible. So far we've sampled: Jambalaya Mix Cheesy Jambalaya Mix (only one so far we didn't like so much) Dirty Rice Mix Red Beans and Rice. I've got the Gumbo Mix on the stove right now so we'll see how that turns out. What say you? Yeah or Nay? |

I don't buy them. The gumbo mix especially. I just chop pepper, onion and celery... brown it in the spicy andouille sausage, add water and a half cup or so of Tony Cachere's seasoning, a bay leaf. frozen okra, water, and brown rice. Shrimp for the last 10 minutes or so. |
Thicken with rice and File powder (ground sassafras leaves) or Okra. |
You can add powdered dried shrimp as well, to add more of a slow cooked shrimp flavor. |

I was born and raised on authentic Cajun and French Creole cooking. Zatarains is like the Hamburger Helper of those types of cooking. Just adequate for a fast meal. One thing that I have noticed about Zatarains box mixes is the lack of consistency in the ingredients preportions. I rate the Zatarains mixes at about a 5 on a 1-10 scale. |

The guys at the firehouse like it for a 1 pot meal. We use boneless chicken thighs that we brown up instead of chicken breasts; lots more flavor,and andoulli(sp) sausage too. Add an onion and a pepper too; to add some fresh ingredients. We also make corn bread as a side (Jiffy corn muffin mix) with a stick of butter and a pound of honey on top after it's cooked. I always use Zatarains Jambalya mix as a base Of course after adding the louisiana holy trinity .... (onions, garlic, bellpepper) using good chicken stock instead of water and extra spices and Rotel and very smoky sausage, It tastes alot better than out of the box Infact most Coonasses that have tried it don't believe it's boxed stuff Don't be afraid of add what you like to it, to make it your own |
I make very good chicken gumbo. You boil a chicken until all meat falls off the bones. You pick out the bones - leave the broth. Put in the Zatarains and any extra rice. Cook it the recommended time. SECRET STEP: Let it sit overnight in the refridgerator - heat and serve. Like spaghetti, its MUCH better on the second day. Trust me on this. |
