I have a pot roast going right now, and it should be done in about 1 - 1.5 hours.

I want to throw my carrots and potatoes in now. I have a 1 lb bag of mini peeled carrots. Would it be over kill to throw the whole bag in there, along with 6 potatoes cut into quarters?

6 potatoes would be a bit much for me...but I don't see why not...
A whole bag of carrots? OK...if you are going to eat all of that rabbit food.


Yeah, throw the veggies in now...they need time to cook.

If you are going to make a sauce out of the braising liquid, I would say no to the carrots and definately no to the spuds.  You'll wind up with a starchy carrot flavored mess.

ETA:  How much did your pot roast weigh before you cooked it?

Then the veggies are strictly optional.

I always just toss 'em in at the beginning, but then I never try to eat em, I just strain the pan juices and make a jus with em.  I toss the veggies out.

No, I'm just going to do it the way mom did.

I put in the whole bag of carrots (minus about 5 that I ate) and 8 small red potatoes. I'll let it cook on low for about another hour and then eat it.


ETA:  How much did your pot roast weigh before you cooked it?  


3.5 lbs. It'll last me to Thanksgiving, after which I will be eating Turkey until early December.
