I'm having a "going away" cookout for my oldest son tomorrow (he reports to MCRD San Diego on the 23rd), so I've been smoking ribs all day today. That's three racks of ribs on the sheet, there are three more in the fridge.

I used a dry rub and smoked them over maple. They smell GOOOOOOD!

Not to blow my own horn, but my partner (cop, not gay) grew up around Kansas City, and he said my ribs are some of the best he's ever eaten.

Nobody in Kansas City understands good BBQ. I've been there. I've had much better in Memphis.

Just got done cleaning up after the cookout. The ribs were great, rave reviews all around. Kicking back and watching the Saints/Seahawks game now.
