I'm watching some of this show on TV, and I've noticed everybody is an officer.
I have never once seen any enlisted personnel on this show.
Does Star Fleet have no enlisted men?

I've heard them make reference to crewmen before but never any rates.  Watch Star Trek VI and they for sure talk about crewmen when they are searching for the magnetic boots worn by the assassins.

the original had non-officers

The red shirted immediate-future dead squad rarely were officers.

I am sure the other series had non-officers but it is always easier to talk of king and queens than of the peons in the mud.

Gene Roddenberry had stated that Starfleet doesn't have enlisted.  Everyone is a graduate of Starfleet Academy.

Later on once his health started declining and after he died, the writers changed that idea, and since then it has been clear that there are enlisted and there are officers.  This started at about the beginning of TNG's Fourth Season.

Miles O'Brien is enlisted, and there have been other enlisted minor characters.

O'Brien's rank was never mentioned early on in TNG.  But starting in the 4th season, it was made clear that his rank was Chief Petty Officer.  That remained true through DS9 as well.

I don't know about 1st sargents but there was Sargent Zelmo Zale a regular and Corporal Max Klinger got promoted to Sargent towards the end of the series

He got one when he joined DS9.  I don't think it was a rank promotion, but it was a big job promotion.  Then at the end of DS9, he left to go back to Earth to teach at the Academy.

The only thing I've found of the entire series is a highly compressed set that won't even play for me. I downloaded the first 2 DVDs of it and neither will play even with the required proprietary codec. Anybody know where I can find a bootleg of the series for say $50 instead of paying the retail $300?

I found this: tv-links.co.uk/ It lets you watch lots of TV shows over the internet but it's incredibly small/compressed so the quality is not very good. Better than nothing I suppose.

The original Star Trek had some SERIOUS babes on it.

There were ALOT of women guest stars that were hot as hell and of course had hardly any clothing on.
It's actually kinda funny that the newer ones are so much more "conservative".

If you have a video file that won't play, download and run G-Spot.  It's a program that will analyze the video file and tell you what codec is required to play it.

DVDs don't need a proprietary codec.  They either are in DVD format or they aren't.  There is some program called ratDVD that I've heard of, but have no experience with.  That may be what you had.  It does require special software.  You might have downloaded RMVB files.  I haven't had good experiences with those.  Try for XVid or DivX format.

He was promoted to Senior Chief Petty Officer later in DS9.

And being the Chief of Operations doesn't necessary mean much when you're in the ass end of no where in a place no one ever heard of or wants to be.(which is what DS9 was right after the Cardi withdraw).

Think of his "job upgrade" as going from a low level maintanence tech in the Pentagon to being in charge of a  Radar station in the Yukon.

They clearly have some in the early series, they showed up as security officers, experts, other people working on the engineering systems, etc.  But for the most, you are correct in stating that with the exception of O'Brien I'm willing to bet none had speaking parts.  They showed up more in ground isntallations.

I'ld be willing to bet that except for Roddenbury, few if any of the authors had military experience or were willing to forecast a "ships" crewing structure in the future. Most of the traditional crew roles were automated.  The food replicators.  And with no dirt ever (? yeah sure?) no ned for custodial or janitorial.  And except for Kirk nobody ever tore uniforms. so no laundry services by hand.  Not unbelievable.  Uniforms all synthetic fiber, dumped by owner in a laundry chute send to an automated dry cleaning or electrozippy process and then RFI or barcoded after folding returned by internal distribution system to owners closets??

E-Bay.  I just found our VHS tape of the first 4 DS-9 episodes.    DS9 was my favorite show.  Good character development and relationship evolution.

Rom was a civilian Ferengi on a Station.  Not a Starfleet member on a starship.

Sorry...when I saw TOS my Business Admin brain went into overdrive and thought: Boilerplate....Terms Of Service....
*I* don't care for the original series... Hubby has some crap from the TOS, but his  preference is TNG (I think it's a Troi thing )
We watched DS9 for bit, and Voyager and Enterprise...but never really gor hooked. It was TNG all the way.
