I am happy to share the recipe, especially since your tip on the roast + pepperoncini + Italian dressing + slow cooker is something I make every couple of weeks!

This recipe will work for doves, venison, beef, or just about any red meat.

Meat - anywhere from 1/2 -2 lbs
1/2 - 1 cup flour for dredging
salt
pepper
oil (canola or vegetable)
garlic powder
1/2 cup flour for gravy
1 cup water
4 cups chicken broth

Slice meat into strips approximately 1/2 inch thin, 1 inch wide, and 2 inches long (or so; like you're making stroganoff).  Lightly dredge in flour seasoned with salt, pepper, and garlic powder.  In large pan, heat about 1.5 tablespoons oil over medium-high heat.  Add the meat and cook until nicely browned.  Remove meat.  Add a little more oil or bacon grease as desired.  Mix 1 cup water into 1/2 cup flour.  Add the flour/water mixture to the oil and cook the roux until peanut-butter colored or darker.  It will stick like the dickens - don't worry about.  Once roux is dark enough, slowly add chicken stock, whisking well to keep lumps at bay and to scrape up the stuck stuff on the pan.  Once all the stock is incorporated, add the meat back in and barely simmer for an hour or until tender.  Serve over rice.

Really simple and tasty.  Definitely something you could whip up at deer camp or camping with a Dutch oven!

I am really upset by the absence of the stapler in this picture.  Other than that it's pretty good and the grub looks tasty.
