Cooked my first today.  Wow!  These things are great.

Took a 4 lb. squash, cut it in half.  Roasted in a 375* oven for an hour.  Seeded it and raked out the flesh.  The flesh shreds and looks exactly like spaghetti.

Sauteed in olive oil, butter, and garlic for a few minutes.  Then poured in about 1/4 of a jar of sauce.

Wow!  You get your pasta and veggies all in the same dish.

my mom makes spiggetti sause and eats the stuff like pasta, its not bad.

after roasting the squash, sweat some garlic and shallots in butter.  add some white wine, reduce til just about dry.  add some mascarpone and fresh tyme and parsley, add in the squash.  seaon with salt and pepper...mmmm..

Just finished off the leftovers.  Damn that shit is good.

Gotta get some seeds next spring.  Def. gotta grow some of these things.
