All you should have to do is to disconnect the defrost timer. But it wont last too long that way. Why do you want to do it anyway?

It will when only work for a while then the coil will ice over and it will stop working. How long it runs before icing over depends on how many times you open the door, outside humidity etc. Disconnecting the plug from the defrost timer will shut down the entire unit, you will need to jump the two wires that make the compressor and fans run.

Disconnecting the defrost heater coil will do the trick.  I can't remember though if the timers run without a load.  I think they do, which will give you an unassisted defrost.

If the coil ices up the compressor ends up running constantly because the ice build up kills airflow through the coil thus eliminating the cooling, making the thermostat tell the compressor to run full time.
