I just acquired a USB flash drive and I'd like to keep some personal files on there, but I'd like to keep them encrypted in case it is ever lost or stolen. I've been out of the loop for encryption since leaving college, so I'm wondering what you guys have to say about it. Thanks!

Use PGP, and install it on any machine you plan to use the USB drive on.  You could use PGP to do a SDA (Self Decrypting Archive, a .exe that when run will decrypt an uncompress the protected file(s)) if you would be using the USB on a machine you don't know the config of.  

No need to get extreme for your application...
