A friend of mine took me out for dinner last night for my birthday.

Went to an Italian Wood Fire restaurant.  Had the rib-eye.

Without a doubt, the best steak I've ever had.

Any cut of Venison.  I am efficient with my venison, saving even the bones as it makes wonderful soup.  Trim the bones, leaving enough meat so you don't ruin the hone on your blade.  Then saw the bones into 4-6" lengths.  Fill a pot with these, cover with water and bring to boil.  Let simmer for 4 hours or until meat falls off bones.  Remove bones, add veggies, season and enjoy.  

Venison freezes well, the bones don't.  Use soup bone first.
