Can one overtighten a scope ring short of stripping the threads? Because my scope made a creaking sound when I tightened up the rings and I hope to god I didn't crush anything.

Yes. scope rings should only be tightened to about 65 in/lbs or three-fingers tight. But unless you were really cranking down on the screws what you probably heard was the scope being twisted into rings that are misaligned.
