Been a while. This is fresh kilt Rocky Moutain Elk backstrap stuffed with spicy pork sausage. Pepper crusted and seared on a grill and baked. Served with Colt series 70 and a Gerber knife that skinned the elk. You can also use deer backstrap. It's gourmet good and pretty easy.
