Do you have a favorite way of making one? Maybe you like one from a particular restaurant...Taco Bells grande scrambler is nice, so is BK's eggnormous burrito.
Here's how I roll: Brown sausage while microwaving a tater. Sauté onions and peppers in separate pan, adding soft diced potato; brown. Crack eggs into bowl and add milk, salt and pepper. Integrate all elements into sausage pan and cook eggs, adding American cheese at the last moment folding it in to melt. Add to large tortilla, and place burrito back into empty veggie pan to grill and seal it up. Serve with preferred hot sauce Discuss |
| Cook some good Chorizo until well done. Drain off all the fat. Return the Chorizo to the skillet and add a can of pinto beans that has been drained and rinsed. smash up the Pinto beans into the Chorizo. Once the beans are heated add 6 to 8 eggs that have been scrambled. Mix the whole thing together and cover on reduced heat till eggs are cooked. Heat up your favorite tortilla and scoop a healthy portion into it. Add 4 cheese Mexican blend to your satisfaction and fold up and eat. Add your favorite hot sauce to one end as you eat it. You'll be thanking me later. |

I get in the truck drive 1 mile to the Flying Tortilla order the the breakfast burrito with bacon (they put it on the inside) and ask for green Chile sauce. This is the second best breakfast in town.
If I really want to go whole hog, I drive 5 miles into town and go to Tia Sophia's. This is the best breakfast in town, but parking my truck is a bitch in the plaza. |

Plan C. Fajita size flour tortilla. Fry sausage. Saute onions and mushrooms. Scramble two eggs. Add scrambled eggs, sausage, onions and mushrooms into tortilla. Add black pepper and Tabasco. Add hot salsa. Wrap it up like a burrito. No cheese. |

| Get some chorizo going, throw in a quarter chopped onion and cook until clear, add some frozen potatoes obrien to the pot but don't overwhelm the chorizo. Whip up 9-10 eggs and add them in. Keep them moving until they cook through. I like mine a little heavy on the egg side. Remove from heat, cover with 4 cheese blend then put a lid on the pan while you heat up your big ass flour tortilla. Add more cheese if you like when you roll them up. To get real fancy, mix up a big glass of 50/50 orange and grape juice to wash it all down. |

How fucking big is your tortilla it holds that many eggs? |

I am still in pursuit of the perfect tortilla for breakfast burritos. Grocery-store versions are all too thick for my tastes; always end up with an inch at each end of triple-folded chewiness that is borderline inedible. Especially if frozen & reheated (I like to make up a big batch and freeze 'em).
I really need to build/buy a tortilla press and experiment with making my own. It ain't rocket science. Sonic's sausage breakfast burritos aren't bad, for a fast-food option. |
|
This is my go to when I'm in a hurry.
Sausage or steak if I have left overs..The Jimmy Dean pre cooked sausage is pretty good. The turkey sausage isn't bad either. Potatoes or tater tots 2 eggs cheese salsa or hot sauce The key to making a good burrito is grilling it after wrapping. |

If I want a breakfast burrito, that means...

We do it several ways;
The usual eggs, cheese hash browns, and bacon. Sometimes we substitute rice for hash browns and chili for bacon or no chili and put enchilada sauce and grated cheese on top. If we do eggs, cheese, hash browns and sausage we also make sausage gravy and ladle it on top. Edit: One more, eggs, cheese, and substitute hash browns with fritos and bacon with chili. |
