Watching some vids to pan fry in olive oil, why do some boil in water for two minutes, then put in ice water, then put in frying pan?  Does it make it crispier, I don't want soggy veggies.

Oven 400 degrees

Put asparagus on baking sheet. Drizzle with olive oil. Salt and pepper.

Cook for 8-12 minutes, depending on thickness of spears.

Pre blanching it cooks the tissue, then frying flavors the outside skin.

Otherwise the skin gets overcooked before the inside is tender.

I use butter, not olive oil. Tastes better.

I've only cooked asparagus on the grill on a sheet of tin foil, coated in olive oil, seasoned with salt and pepper. Nice and tender every time.

These are all great ways for cooking, but they miss the most important step...after carefully cooking, toss it in the garbage where it belongs.

Grill it.

Place asparagus in plastic bag, add olive oil, add fresh cracked black pepper and sea salt, add rosemary, let marinade for an hour or two. Take out of bag and place on grill. Grill until done but still crisp.

You can thank me later.

Go to deli, get pancetta, sliced 2 sheets of paper thick.
Wrap 2 stalks of asparagus with each slice of pancetta
Place under broiler, on high.
Turn once.

Buy skinny asparagus(#2 pencil or skinnier).
Cut the base off.
Place in a pan with water.
Bring to a boil.
Drain.
Toss with butter and salt.

Enjoy.

Pee stinkily.

my wife bakes it also, it turns out to be crispy on the tips. it is fantastic. (other than the oven part this guy maybe bat shit crazy, i have no idea other than oven.)

Pin a bunch together on a toothpick. Paint with sesame oil, salt and pepper. Grill for a few minutes. Its the best way.

This is what I do except I put the asparagus in a gallon ziplock to coat it with the olive oil first.

I also have a cast iron griddle that fits on my grill that I'll cook it on if the grill is available.

I just had some tonight with my steak. When I'm grilling already, I lightly brush the in olive oil, sprinkle Tony's and Dillo Dust on them. Grill on aluminum foil for 15 mins. Cooked but crisp. No soggy.

I just got done doing exactly this about an hour ago, except I cooked mine more like 16 minutes because they were a little thicker. Came out great.

I love canned, but they are very different than pan-fried or grilled.  

Growing them is quite the process.  I have a 2' X 16' asparagus bed that is ~ 5 years old and is producing very well.  I also started another bed this year.  You can only start harvesting the 3rd year.  If you get a good bed going, you will have a hard time keeping up with how much is produced!

Ive been picking and eating it for a month.  Fry bacon, sautee asparagus in bacon fat when done, roast in oven with a little oil and italian herbs, steam, grill, add cheese or not, butter or not, usually a little salt and pepper, we had a weekend where we picked more than i was going to eat so i pickled a bunch, yum.

Lots of ways to enjoy asparagus.

Chopped up and added to a fritatta is absolutely delicious.
