For me, it's the French version. It ends up in most things I'm cooking, from soups and stews, to roast meats, to sandwiches, to stuffing, to aromatics. I'll add in green pepper, but it's not my go to.

I consider the Cajun version to be the Holy Trinity, and the French to be mirepoix, but I use the Cajun variety more really. I don't really keep carrots on hand for some reason.

An interesting question actually. I've found myself using more red and yellow peppers now. I've never had a taste for celery.
