Which version do you believe in?
The mirepoix of French cooking: Carrot, Celery, and Onion The Cajun variant: Celery, Green Pepper, and Onion Or is there another go to in your kitchen? |

I consider the Cajun version to be the Holy Trinity, and the French to be mirepoix, but I use the Cajun variety more really. I don't really keep carrots on hand for some reason.
