Looks awesome!! I usually cut mine and stuff with onions, peppers, garlic and cream cheese and then wrap with bacon.

That's a backstrap, the tenderloin is the inside cut along the spine, or am I wrong?

Regardless, looks amazing. I love backstrap....we go through about 5 deer each year. It's so damned good I rarely have complex recipe. Salt pepper, rare

I process them when I can, but having a good clean butcher handy is a good thing. Sometimes weather/work, need to get them in quickly
