We're making some shrimp enchiladas tonight. Let's start with sautéing some tomatoes, onions, and jalopy-nose.
 Then we mix up some heavy cream, sour cream, cayenne pepper, chili pepper, cumin, and minced garlic.
 Pour that in on the veggies, add the shrimp, and let it cook for a while.
Place a handful of pepper jack cheese in each tortilla and then spoon a cup of the shrimp mixture in each one. 
Cover the wraps with the remainder of the sauce and some more pepper jack cheese and bake for a bit.
