Depends on the butcher making it...I've had some pretty tasty ones!

Got one from a little meat-market in Louisiana once that was the best one I've ever had. It was stuffed with a Cornbread/Andouille stuffing, and came with two packages of some of the best Boudin as a side.

Fun to build, lot's of work to de-bone the birds.  The stuffing wasn't great.  

I'm glad I tried it once, but I probably won't be making another any time soon.

Had one at a party where they had a couple shipped up from LA.  Glad I got to try it, but I am fine with a perfectly roasted turkey (and a perfectly roasted duck- on the side)!

I rolled my own last year. It was a lot of work deboning the birds and rolling them up with a layer of stuffing in between each bird. But it was well worth it, we slow roasted the birds at 250 degrees iirc for over 12 hours or so and it was melt in your mouth tender.

So its more work, time and skill than most GDers could handle.

Someone gave me this recipe when I was in school.  Never really had a chance to try it out though, never came across the main ingredient in the local markets.
