I will probably use this recipe since this is Utah




Ingredients




  • 2 tablespoons vegetable oil, or corn oil


  • 2 medium onions, chopped fine (about 2 cups)


  • 1 red bell pepper, cut into 1/2-inch cubes


  • 6 medium cloves garlic, minced or pressed through garlic press (about 2 tablespoons)


  • ¼ cup chili powder


  • 1 tablespoon ground cumin


  • 2 teaspoons ground coriander


  • 1 teaspoon red pepper flakes


  • 1 teaspoon dried oregano


  • ½ teaspoon cayenne pepper


  • 2 pounds 85 percent lean ground beef


  • 2 (15-ounce) cans red kidney beans, drained and rinsed



  • 1 (28-ounce) can diced tomatoes, with juice



  • 1 can (28 ounces) tomato puree





  1. Heat oil in large heavy-bottomed nonreactive Dutch oven over medium
    heat until shimmering but not smoking, 3 to 4 minutes. Add onions, bell
    pepper, garlic, chili powder, cumin, coriander, pepper flakes, oregano,
    and cayenne; cook, stirring occasionally, until vegetables are softened
    and beginning to brown, about 10 minutes. Increase heat to medium-high
    and add half the beef; cook, breaking up pieces with wooden spoon, until
    no longer pink and just beginning to brown, 3 to 4 minutes. Add
    remaining beef and cook, breaking up pieces with wooden spoon, until no
    longer pink, 3 to 4 minutes.




  2. Add beans, tomatoes, tomato puree, and 1/2 teaspoon salt; bring to
    boil, then reduce heat to low and simmer, covered, stirring
    occasionally, for 1 hour. Remove cover and continue to simmer 1 hour
    longer, stirring occasionally (if chili begins to stick to bottom of
    pot, stir in 1/2 cup water and continue to simmer), until beef is tender
    and chili is dark, rich, and slightly thickened. Adjust seasoning with
    additional salt. Serve with lime wedges and condiments if desired

You can buy bulk instead of cutting/squeezing. I guess you could live in an area that doesn't have it.

Leave out the beans. Replace ground beef with 3lbs beef short rib. Cut off majority of the fat ando cube the meat about .5".



Sear meat in red wine. Then slow cook meat with the other stuff

VacaDuck’s Powder Keg Chili (original recipe)

4 pounds of London Broil, diced into 3/8" cubes
6 medium white onions, diced up nice and fine
2 bulb of garlic, similarly diced
50 dried Arbol chiles, turned to powder in the food processor
10 dried New Mexico chiles, diced up nice and fine
8 large Jalapeños, diced
8 Habaneros, diced
Cumin, and Chili powder - no real measurement, just what looks and tastes right.
2 Tablespoons smoked paprika
2 Large bell peppers, diced up like the Jalapeños
2 large can of stewed tomatoes,
1 large can of Beef Broth
¼ cup of molasses
2 bottles of your preferred beer (1 for the Chili, 1 for the cook)

Optional – substitute 1 pound of chorizo for 1 pound of beef.

Sweat all the veggies in a large pot.

Brown the beef with a touch of salt and pepper.

Add all ingredients to the pot with the veggies and let simmer for 3 hours.

Serve with limes WTF ???? As a guy who had one stint in the state chili cook off as a judge . Most had no beans although I like beans in chili but not in spaghetti sauce . Most were straight red pepper to the point that the meat could have been rubber bands or tree bark . They had no flavor of anything but pepper and tomato .  This seemed to be a common theme among the contestants . They other ingredients appear to be for color .  Many contestants were from Texas. It seems a lot of guys from Texas will travel a long way to show off there version of hot dog sauce .

Nothing "professional", but local cook offs I've been roped into playing a judge...  Automatic -4 for no beans.  And avoid judging these at all cost....... Typically everyone is shit faced drunk and it's rare to give someone a 6

You will be quite pleased with the substitute.

Gave up on using ground beef in chili years ago, it's basically a filler and you can't really taste the meat.
Switch up and it makes a world of difference.
