I just gathered about 20 gallons of cactus fruit for my wife to make jelly.  We might make some cactus mead too.

In Arizona we eat the fruit but we leave the pads for the javelina.

This is the truth.

The fruit is delicious, use only the new pads for cooking or pickling.

They are similar to okra in taste and possible slime factor.

Welding gloves, a propane torch and a sharp knife are your harvesting and prep tools.

I have them growing in my back yard.  Living in the Senora desert i have always thought of it as survival food.  The fruit is good as a jelly.  I have yet to to buy the pre sliced and packed.
