Got a 6.55lb brisket free yesterday from a neighbor at my farm.  He raises buffalo... The butcher shop he uses gave him a case of briskets to try to sell at his shop (He sells pork and bison, not a lot of beef.)   So  decided to throw it on the egg today. Along with a 4lb corned beef I de-brined and I'm turning into smoke pastrami.



The meat:




Brisket:

Salt
Pepper
Little paprika
Little chili powder
Little garlic powder
Mustard + Brown Sugar + Worcestershire as a binder
Splash of bourbon to rinse it all off as a start.


The GoodOne lump charcoal + Cherry wood chips.

Pastrami:
Debrined for approximately 18 hours. 4 water changes.
Pepper
Coriander
Garlic powder
Parika
Thyme
Mustard as a binder.


The set up:



Large BGE, Custom made table with granite top.  Yeti 65 for wrapping / cooling later. (Heading to my parents house for dinner.)  

M&P15 lower, Geissele SSA-E, MK3 15inch rail.  BCM barrel / upper, Saker 762, Vortex PST 1-4
H&K VP9,  Octane HD45k

Looks awesome. I have been in a mood to smoke something but it has been to hot

The Genesis is more then enough for me. The only reason why the BGE nest is so nice, is because my girlfriend and I built it.

I bought the house for the view and land. The house itself is actually nothing special. 1750sqft cape cod. However the community I live in, has an old side and a new side. I have the largest lot on the old side. (1+ acre) and my neighbor on one side will be moving soon. I'll buy his property which will give me about 3 acres out of a 242 acre private community. (Hunting and fishing based community. We have our own 5 stand trap range with trap house, and a 35 yard shooting range.)

My house was originally built in 1921. When I bought it, the house had sat abandoned for 5 years. It was nearly a  tear down from the start. 6 years later, the foundation is fixed, electrical is fixed, and everything has been gutted/remodeled on the cheap as in a few years I'll either do a major addition or tear it down and restart depending on the foundation issues.


I don't need a lot of property. My dad and I own a 200 acre farm, split in 2 sections. 100 acres on either side of where I live. With my own 100 and 400 yard shooting range on it.
