Much improved. My daughter said I have to keep these scales. The oversize thumb disc made a huge and immediate difference. The first time I opened the knife after installing it, the blade just flew out.

Yeah, I understand the 9mm size thumb disks for low profile and as a back up on a waved knive, but I really prefer the .45 size (oversized) generally. Makes all the difference.

ETA- lots of Italian restaurants in the US, very few German restaurants,(Schneithorst’s).

Hell, if you count Irish Pubs that have a kitchen and sell Sheppard’s Pie as a restaurant, there’s more Irish restaurant’s in the US than German restaurants.

And we all know how amazing the Irish culinary world is...

The reason you don't hear about as many dishes or restaurants as "German" as other ethnic food groups is because it is so ubiquitous in american society.

Ever grab a brewski and grill some brats?

Ever sit down to a nice roast and some veggies?

The German influence on American food is mostly hidden because it has been going on for so long.

The meat-and-potatoes cuisine of Germany has had a substantial influence on the melting cooking-pot of America, too, especially in the Midwest, giving us such important dishes as frankfurters, hamburgers, brats, potato salad, and meatloaf, in addition to inculcating a love of mustard, sauerkraut, and vinegary composed dishes.

American as apple pie? Guess who was making Apfelstrudel before the first big wave of their immigrants hit American soil.

I think what you are perhaps referring to is a common misnomer; you are equating a Bavarian stylized restaurant to "German".

You are not alone! This is very common because the Bavarians stand out as a lead culture, not just in the German speaking countries, but around the world because of their festivals that include beer and food. However, that is all it is. It is not necessarily representative of all German food and drink or even all Bavarian food and drink for that matter.

Fun fact: German-Americans make up the largest self-reported ancestry group within the United States accounting for roughly 49 million people and approximately 17% of the population of the US. Only natural their food would be everywhere!
