Whether or not you should is similar to the beans argument for red chili. The people that put potatoes in green chili are wrong. The people that put beans in red chili are not. |

Let them cool a little while (some put them in paper bags), shake 'em up, then peel the outer skins off. They are inedible. Needs way more chiles while you're at it. |

Find some long green chile while you're at it. Best long green chile in the world comes from Hatch down the Rio Grande to Las Cruces / Mesilla, and southwest into Ascencion in Mexico.
Potatoes are acceptable, so long as you've got lots of chile. Beans are not. Poblanos are acceptable, as are tomatillos, for the flavor. Jalapenos, or if you're feeling adventurous, jabaneros, for heat. Makes an incredible crock-pot Chile Verde. |
