For those who grind their beans, does freshly roasted coffee sometimes taste a bit sour? I've tried 3 different kinds of coffee, all from different roasters that were roasted in the past week, no matter what brew method I use (aeropress, french press, bonavita drip) they are all sour. I've tried finer grind too....

Anyone tips other than just letting it rest?

Do you have a proper burr grinder? They do make a big difference.

I grind Dunkin Donuts whole bean everyday using a simple mill, and then brew it cafe-style using a Bialetti Mocha Express.

Never sour, always yummy

Love it!!!!!

Baratza encore, I've tried 10 and 15(recommended drip/aeropress) and 25 for French press grind settings

I have the same grinder. What were you doing before to get good coffee? Some coffee can be sour when fresh but after 4 days that should really be gone. I usually try the coffee as soon as I get done roasting it.

I'd been getting great coffee by using 15 grind setting and using the bonavita. Was just using some 8 o clock original blend.

Then I read about freshly roasted being best and got some stumptown and verve and decided to try those but they are crazy sour

It seems you might be the common theme.  Don't over grind you beans.  They will get bitter and also overheat in the mill.

Aside from that, have your water 204* +- 4* for no more than 8 minutes over the beans.  If you have even one bad bean in the grind it will make the pot bad.

Try this coffee.  It is expensive unless you do like me and buy 25 bags at a time and use a coupon code.

if your water is good I don' even think the water TEMP is super critical.  I would check into the beans/brand.  4 or 5 half assed roasted beans could do it.  Try something else and don't give up now whatever you do as that's not right.

Were all the coffees you tried dark roasts? I find I don't like mine roasted much past first crack.
