Smoke the jalapenos until they are soft. De-seed them and the habaneros, add to blender with a couple cloves of garlic and some white onion. With blender running, slowly add water until the peppers, onion and garlic form a loose paste. Add salt and ground black pepper. | Puree peppers and add water or beer or cider until you can pour it. Add one tablespoon of salt per quart. Ferment under an airlock for at least 6 months. You can spice it up before or after fermenting or both, I prefer after as flavors don't ferment out. Use as is or can it up for long term storage. I'm still eating on the batch I made 3 years ago. |

I'm a hot sauce freak and this is the best, tasting, not hottest, I ever enjoyed. A friend, George, makes some up every year after pepper harvest and gives bottles out at Christmas. Oh, it's hot but oh so delicious. George’s Hot Sauce Liquid part is 80% vinegar 20% is Saki and fresh Navel Orange Juice Habaneras, mostly orange Fresh Tomatoes Vidalia Onions Honey Fresh Cilantro Fresh Garlic Put all the stuff in a blender/juicer |

My favorite has become something called Sambal Oelek. Similar to Siriacha, but thicker and less vinegary.
