How I make 'em, bring on the hate cause i don't care





I marinate them in a Food Saver vacuum marinater thingy, works well.





I take the skin off of them, don't care for it much











Here's the marinade I use and also the seasoning











Warming up the grill, propane for the win











Grill time, they're thick and juicy, will take longer than usual to cook, 12-14 minutes a side on medium











But cook they do











Letting them rest and drain











Good eats!

It's soy sauce based with India type spices,  but good.  Sold in Florida, maybe other states, can buy it on line

Looks good to me.



The only thing I do differently is grill them with the skin on for flavor and then toss the skin before eating them - I hate eating chicken skin also.

While I eat chicken at least a couple times a week I just can't get too excited about it.

Small, but also portable, for two chicken breasts you don't need a 1200 square inch grill, big waste.  
The big heavy porcelain coated cast iron grates retain heat and helps to cook it evenly, I don't like those skinny wired grates

I had one of those, loved it to death.  the cast iron grates were better by far than anything else in the price range.

be careful not to forget about it and leave it pre-heating on high though...  mine got so hot it melted the polymer frame it's sitting on...  

now i have an all-metal grill

I use use high when getting it started, them go to medium



Put on the meat while it's warming up, the food doesn't seem to care much



Then I turn off the gas at the tank and let the propane in the line burn out at the end of the grilling session

ETA: I got 2 ribeye waiting to grill, Brussels sprouts in olive oil and butter waiting to bake and a homemade olive oil, lemon and garlic salad dressing waiting as well

My favorite is what they call "fire company" chicken around here.

50/50 vinegar and vegetable oil
egg
poultry seasoning
white pepper

You can marinade, But not necessary.  

Typically the marinade is applied with a pump sprayer while cooking

eta: I've read somewhere that the recipe was first developed at Cornell university. I always forget and think it was Purdue for some reason. .....

Looks good! Try to brine them sometime in water with 1/2 cup sugar and 1/2 cup salt for a few hours then season....

I stock up when it's on sale, sometimes they have it for 99 cents a lb, then it's chicken for the next month
