Spot on. I prefer the marbling in a good ribeye for the flavor, and they're just as tender as a fillet. Better, larger, and usually a few dollars cheaper.

Something I have noticed about ordering red meat when I dine out, they always, and I mean literally always, cook it one degree of doneness to much (e.g. if you order medium rare it will be medium, etc.). So I always order one degree of doneless less than I want it and almost always get the meat cooked exactly like I want it. But then I rarely eat red meat when we dine out, other than in a hamburger, because it is just stupid expensive.

You need to go to a better restaurant. I took a lot of pride in hitting all the temps on a ticket correctly and have sent out 80 plate parties with nothing returned many times.

Edit: and I did it on much less than $15/hr

Carryover.  It's a thing, and not every place accounts for it.

If the place is new and I don't know how they run the kitchen, I probably won't order a steak anyhow, but if I do I order it rare.  If I know the place, I'll order mr.

But still, for the price and the risk, plus how simple it is to cook at home, I'm liable to just do it myself.  I can't even remember the last time I paid restaurant prices for a steak.

If I go out, I'm ordering something complicated that I don't feel like making all the individual parts for.

Only time I have found this rule not to be true is at really, really good restaurants. But then I can't afford to spend $200 for a meal for just my wife and I more than once per year. The rule holds true for the vast majority of other restaurants where your steak meal is sub $30.

A lot of guys order filet because they want to show off $$$$$$. Same with the 20+ oz lobster tail that will taste like shit compared to an 8-12. All they care about is whipping out their black amex and impressing people. Those are the best customers
