They look great. I have 2 racks seasoned and will be smoking them tomorrow. I usually cook them right after rubbing them but wanted to try leaving them over night once to see if it makes a difference.

If your rub contains a bunch of salt, they will taste hammy. Salt will start to try to cure meat if left on there overnight. As long as it's not loaded with salt, youll be fine. I always rub right before I go on. Let me know how yours turn out.

I made ribs yesterday and I think the charcoal is a PITA. I like the idea of charcoal for grilling and smoking but in the end, the mess and inconvenience always seem to make it more trouble than it's worth.

The ribs and a whole chicken are on the lower rack.  Pork belly that was cured for a week becoming bacon and some jalapeno cheese sausage on the top rack:

We did ribs today.  Although I didn't have enough charcoal so I put them in the oven at 275 for 3 hr and finished on the grill with burgers.  Not bad.  May do again in the winter.  The oven heated up the house too much today.
