I made my first lasagna.    A little too much sausage, but still pretty good.  No photos, cameras not downloading to the computer for some reason.

I grew up with cottage cheese.  I much prefer ricotta now.

Also: don't use fresh Motz.  In my opinion the end product is too watery.

And FFS, boil some damn noodles.  Those no boil ones suck ass.  And you can't make the little lasagna roll snacks that I always make with the leftover noodles.

Par boil is the word you are looking for.  Just as they reach a temp where you can cut them with scissors, throw some ice in the pot to stop cooking and then assemble the dish.

I made plenty of lasagna with plain, uncooked noodles and it was fine.  Pre cooking makes it easier to work with.

No, "boil" is the word I was looking for (and used). As in, the opposite of "no boil", which is how those shitty noodles that you do not precook are advertised.

I've made plenty of pans of lasagna with regular noodles cooked al dente.  When I make my sauce, it isn't terribly watery so the noodles really don't cook much more and get all soggy, if that's what you're worried about.

Look at my link, wasn't my photobucket.  Hardshell is/was a member here.  It was the first link in a google image search.
