Fresh, hot buttermilk biscuits to go with dinner.

Thanks to BulleitBaby for the recipe!

2 cups White Lily self rising flour

1/4 cup shortening (varies according to temp and brand)

3/4-1 cup Mayfield buttermilk (the best biscuits are made with the buttermilk in the bottom of the jug)

Preheat oven to 425

Measure out flour.  Cut in shortening. Mix in buttermilk.

Turn dough out onto floured work surface.  Knead very slightly a few
times.  Pat dough out into 1 1/2 inch thick round (I don't use a
rolling pin).  Cut out biscuits with a biscuit cutter or a glass.  I
like to use a standard American pint glass.  Place biscuits on a greased
baking sheet with biscuit edges slightly touching (this will make them
rise up straighter).  Bake at 425 for 20-25 minutes or until golden.

Add flour and shortening to bowl.  Cut in shortening.

Add buttermilk and mix together by hand.  Do not overwork the dough!  It should just come together and be sticky.

Turn out onto floured cutting board.  Pat out to 1' to 1 1/2" thick round.

Cut with your preferred biscuit cutter.  I use the outside tube of a Wonder Cup.

Place on ungreased cookie sheet.

Cook until golden brown.

Enjoy!

I hardly ever make them because they're so messy (at least when I do it.) Next time I just need to make them on the back porch and hose the place down when I'm done.

I make lazy-assed drop biscuits to avoid the cleanup. No where near as good, but good enough for gravy!

You non hillbillies work way too hard at biscuits.

My wife makes drop biscuits

Flour milk a little lard and a spoon to stir then drop in a hot cast iron skillet and bake.

Those look tasty but way too much work.

Gosh I haven't seen a post from her in ages. She was a pro cook as in competition biscuits.
I was wondering if anyone saved those old recipes. She is mighty fine looking too. For you basement dwellers.
Thanks for re posting that recipe. I think she would approve.

I see biscuits and sausage gravy in my future.

That's it.
Use buttermilk, lard and a hot cast iron skillet (10-15 minutes at 350 in the oven). My memaw would "pinch" them into the right size and put them in the pan. She passed 20 years ago but I still have the skillet and the know how.
OP's biscuits aren't bad for a CA boy (look pretty damn good actually) but they need buttermilk, cast iron and lard to be right.
