Sweet, not sweet, it doesn't matter to me. Cornbread rocks. Adding jalapeƱos to either method just makes them better.

I guess I do have one stipulation: I like medium or coarse ground corn meal the best, but I'll take just about anything over that Jiffy crap.

Not sweet, or only very slightly sweet.   There is a place nearby that makes giant unsweet cornbread muffins, splits them, grills the halves and slathers them with butter.  Heaven.

For Tier 1: grind your own cornmeal (it makes a difference), and bake in a pre-heated cast iron skillet.
It's almost worth buying a grain mill even if all you ever use it for is cornmeal.

Don't put me in a box!   I like sweet, and jalapeƱo, depending on the main dish.  Sweet with  most "southern" or "soul" foods, and jalapeƱo with most bbg or tex mex.

Wife gets mad at me because I get choked almost everytime doing this, love cornbread and milk.

As far as I'm concerned you can cut the middle out of cornrbread like a donut and feed it to the chickens, I like the edges and bottom.

There's a recipe on the back of the box to add bacon, cheese, corn, and green onion.  That's pretty good too; I take it to bring-a-dish gatherings sometimes.

I put a little sugar in when I make cornbread, but not enough to make it taste sweet.  Our father always did the cornbread and milk in a glass thing.

I'm not a big fan of jalapenos, but I do sometimes add a 4 oz can of chopped green chiles and a handful of shredded cheddar cheese in the mix.  Tastes great.

This is truth.

I have grown my own heirloom corn, let it dry on the stalk. picked it shelled it, ground in in my Grainmaker Grain Mill and made fresh cornbread. Pure and delicious!

It's like the difference between eating a fresh ripe banana that you picked from the tree and one of those pathetic greenish yellow products that you buy in a store.

I loathe and despise Cracker Barrel.  But based on your recommendation and the theory that even a blind hog will find find an acorn once in a while, I'll pick up a box next chance I get.  Might be a while though, the nearest one is thirty-five or forty miles away.

Heat up a small Cast Iron skillet on the stove.
Heat oven to 400.

Mix up in a bowl.

1-1/4 cup ap flour
3/4 cup corn meal
1/3 cup sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup of fine shredded Jalapeno jack cheese

Mix together with a fork.


In another bowl

1/2 cup of heavy cream
1/2 cup whole milk
1/4 cup Veggie oil
1 large farm egg

Beat the shit out of it.

Combine the two, and stir everything until a wet lumpy mess.
Pour into the heated and greased cast iron skillet.

Chuck into oven for 25min. until top is golden brown and crusty.

Skip cheese, and add 3 finely diced Jalapenos for a variation

Yeah, it ain't diet food. Diet food is for Democrats and citiots.

We don't eat it anymore but it was always a slight point of contention because I like thick, fluffy, sweet cornbread baked in the oven and he likes thin, crunchy, salty cornbread made in a cast iron skillet.

We don't agree on chili either.

Standard baby/toddler food.
Titty or bottle to cornbread and milk. Then by 5 or so on to biscuits and gravy etc. like the rest of the family.

I was a teenager before I ever saw anyone do that.  She was a friend of my older sister's who'd spent the night and that was her breakfast.  We probably embarrassed the poor girl with all of our questions and staring.
