For me , no okra.

Yes , I know gumbo is an African word for okra,  or whatever.  I just prefer mine w/o okra.

Okra in seafood gumbo but never in chicken and sausage. My wife likes it in chicken ad sausage but that isn't how I was raised.

I like it with shrimp, andouille, and okra.

That said, I can totally enjoy it with crab, gator, or whatever, and I'm OK with file... Just not my first choice is all.

Well after coming in late to the other gumbo dinner pic I might as well not miss this one.

As long as its not slimy, I like okra in my gumbo....usually its like getting a spoon full of chunky snot though

So.....I usually prefer no okra in my gumbo. I guess it really depends on who cooks it.

Okra for me usually, it adds to the flavor profile and thickens the broth. If no okra then file' powder to thicken it up a bit and add some woody/earthy flavors.

A VERY little okra in gumbo is good.

When people turn it into "boiled tomatoes and okra with a couple of oysters in it" is when it's

Personally, I prefer okra fried.   Mmmm....

Depends on who makes it and what type gumbo. Also you can saute the okra for a few minutes to get the slime out.

What in your favorite deity's name does a slimy and mucilagenouse green vegetable bring to the mix that increases your enjoyment of the dish?

Why not just cough up a lung cookie into the gumbo and call it good?

Butter?   BUTTER?

No SIR.

BACON grease is the proper basis for a roux.

Okra actually helps thicken it a little.   You could just use corn starch if you really hate okra that much (I understand).

There's nothing to be scared about. It's just butter and flour. Keep the heat low and stir stir stir.

I do not dispute that okra can thicken the dish. So can lung cookies, though. As can other substances.
