Oh how very right you are... how very right! This has become my absolute favorite. But it's hard to find around here. |

It depends on what you normally drink if you are canned corporate lager guy it may be a bit strong for you
The Trappists ales are known for complexity of flavor, Chimay Blue is almost caramel sweet with a light body and lingerining finish that cannot be described, it is other worldly. One thing about trappist ales is that they are an experience of the senses, you will want a Chimay style glass or a wide mouthed wine glass. The reason being that the aromas are important to the flavor. We as animals smell most of what we taste, that is why a cold keeps you from enjoying bacon, and you won't want to miss this, believe me. It is not a beer to suck out of the bottle after a morning of PT. It is meant to be savored on the porch or by the fire after a day of being awesome. Goes well with some smoked sausage or nice cheddar and fresh apples. There is yeast on the bottom, it will not hurt you however it will affect the flavor, not in a bad way but it will be different. I did not like it the first time I tried it, two sips later I wanted more, 5 years after I was en-route to Brussels on beer holiday. Take your time with it, and dig the complexity, this is a precision rifle with a NXFs optic capable of 2000 yard shots, canned lagger is a Tapco SKS at the gravel pit. The trappists ales are almost something different from beer, they transcend any other accomplishment of our species. I highly recommend a styled called a Tripple particularly Westmalle, they were brewing ale 50 years before the norman invasion of Ireland something like 6 00 years before the may flower. I have used their yeast in my honey ales and it always works well, with sharp citrus notes and higher octane than anticipated….more than enough to make the pain go away. Trappist ales are just one of the many good things to come from Belgium |

When I run out of my Westvlereten 12, this is my go to.

| One of the best beers in the world. I remember seeing it for years at the local grocery store thinking it was some sort of gimmick, then I saw a "dinner pic" thread on here and the OP had a bottle of Blue with his dinner and people were falling all over themselves to say how good that beer was. So I tried it and damn. I never really liked stuff like Bud or Miller, always liked higher end production beers, but this stuff was my beginning of being a beer enthusiast. |

To me, it's like Angels are crying and you are lapping up their tears... I like mine at 50-60 degrees or so. I put a tall glass over the bottle and just invert it to make sure it pulls al the tasty stuff off the bottom. You brother in law is a good guy in my book. |

so.. i tried it and... ill be kind.. it tasted like beer. it tasted like almost every other beer ive tried. it tasted like nothing special. the flavors specified didnt exist, the hype brought on by the buyer and beer lovers here was not met in any way shape or form. to me, its just another beer with an inflated ego and not much else. |

ive had my own beers, ive had thunder ranch ale (actually has non-beer flavors), rock bottom brown bear ale, heavy seas amber ale (i think it was an amber ale), skull splitter ocadian ale, various polish beers (couldnt tell you the name), various ales of various supposed flavors... etc all but the heavy seas, my own porter/stout, brown bear, and thunder ranch ale tasted basically the same. Hey you think what you think, but I find it incredibly odd that a guy who brews his own beer thinks most beer "tastes basically the same". I mean, I guess in the sense that it's all made from water, malt, hops, and yeast it "tastes the same", but every style is unique. |

Well, it's possible that you're right and Chimay blue is the same as something like Keystone Ice. Or your taster is not normal and the rest of us know what's up... |

| Something is wrong with your taste buds bro. Chimay Blue has a ton of dark fruit and spicy esters from yeast. An American amber has a very neutral yeast character, balanced bitterness and maltiness with caramel and bready notes. Did you break your nose and can't smell or something? Because ARF isn't wrong, nor am I. BJCP certified, pro brewer, etc |
