I know its stupid and I'm the only person in the world who even cares, but what kind of fish do places like Long John Silvers and Captain D's normally use.  I'm guessing Whiting, but I don't know.

It's been a long time since I've been "in the business", so to speak.  IIRC, most chains sell whatever commands the lowest market price.  May be whiting, cod, etc.

But sometimes, it's just better to not know.  [:)]

I'm not sure what Long John Silvers and Captain D's use. Typically those types of restaurants use whiting, cod and/or pollock.

I do know that the Fish and Chips restaurants in England use dogfish. Actually they use winter (spiny) dogs which are a very small shark.

There are local (NJ) fishing boats that catch these (dogfish) by the ton and ship them to England. They only get paid about $0.15 a lb but they work on volume.

I always see pollock and Alaskan Whitefish on fish stick boxes.

I've also seen:

- Northen Pike
- Carp

On a bottle of something else.
