Here is a good recipe:
Meats: 1 lb. Tri-Tip Sirloin, cut into ½” pieces 1 lb. Ground Pork Seasoning: 6 Jalapenos, halved and seeded then sliced 3 Serranos peppers, halved and seeded 3 Habaneros peppers, whole 1 Poblano pepper, whole, charred, skin removed and seeded 1 large Yellow Onion, diced 1 clove Garlic, diced small 3 Tbs. Chili Powder 2 Tbs. Cumin Powder Liquids: 1 large container Beef Broth 1 heavy beer 3 bottles Chili Sauce Thickener: 2 Tbs. Corn Meal 1 small can Tomato Paste Cook in 5-6 qt. pot: Brown meats lightly. Add Seasonings. Add Beef Broth and Beer. Stir and simmer for two hours. Remove the whole chilies (not the jalepenos) Add Corn Meal and Tomato Paste and simmer for one more hour. Add Chili Sauce and simmer for one more hour (4 hours total). Better the next day. |
