Basic White Onion... I find the stronger flavor of a white one to survive the slow cooking better than a milder sweet yellow or vidalia

I actually like raw chopped onion to top my chili (along with oyster crackers, cheese and sour cream) Sweet onions are good for that. Just regular white or yellow will do for cooking though.

I dont really mind the color so long as they are strong and not too sweet..

they have to be sauteed before they go in the pot tho. Raw onions added to the pot ruins it. Add raw garlic, fry the oinions.

That's the kind I make, but I put some onions in. I start in the dutch oven with onions and just enough oil, then meat, then pureed and/or chopped chilies with a little bit of water.
