I have a craving. I have traditionally been a fan of "no beans" in my chili, but this is
fucking good. Ingredients that I used. 1/8 cup vegetable oil 1 lb. ground sweet italian sausage 3 lbs. of chuck roast 3 cloves of garlic 1 sweet onion 1 brown onion 3 cups of beef broth 2 - 28 oz. cans of crushed tomatoes 1 16oz. can of Bush's brand pinto beans 1 16 oz. can of Bush's brand red kidney beans 4 roma tomatoes 1 Passilla pepper 2 chipotle peppers 1 smoked ancho pepper 1 serrano pepper 1 jalapeno pepper 4 tbs Gerthard's chili powder 1 1/2 tbs. cumin powder 1 1/2 tsp. kosher salt 1 tsp. cayenne pepper 1 1/2 cups brown surgar 2 tbs. honey In a 6 qt. stockpot heat veg. oil over high heat. Brown the It. sausage and diced chuck roast. remove and set aside. Then saute approx. 4-5 mins. the finely diced garlic, onions, and fresh peppers. Return the meat and drippings to the pot. Turn the heat down to simmer. Meanwhile in a cup of hot water, soak the dried chili's for at least 10 mins, then coarsely dice and add to pot. Rinse the beans and add to the pot. Add the diced roma tomatoes, along with the remaining ingredients and stir well. Cover with the lid and place in the oven at 250* for at least 3 hrs. Mix a vodka tonic or 4 while waiting for dinner, and enjoy. |
