Is deep!

Ground up some beef chuck and lamb shoulder and made 5 lbs of sausage today, so I threw together a pie!




Copius amounts of cheese!

Damn, that does look tasty.

One of the saddest days in my recent years was when the only Pizzeria Uno franchise in my area closed down. I miss that stuff, fattening as it is.

Just a regular pizza dough recipe

1 1/2 cups water
1 package active dry yeast
1 teaspoon sugar
4 cups flour
1/2 cup olive oil, plus
2 teaspoons olive oil, to grease bowl
1 teaspoon salt

I think maybe it's supposed to be a little more bread like, but I dont really like it like that, so I stick to a regular crust.

Let is rise for 20-30 min then stich it in the pan and cook it off for 10 min. Load with cheese meat and sauce cook for anothre 30 min or till it looks done!

Dough is already posted. Sauce is simple, tomato sauce, salt, pepper, garlic, basil, oregano, little lemon zest, olive oil.

Sausage is 70/30 beef to lamb. Toasted fennel, garlic, onion powders, salt pepper, red pepper.

I guess I should tell you the rest!
Pre cook the crust for 10 min.

Add mozzarella, low moisture, sliced 1/8th inch or so, completly coving the bottom of the crust, spread sausage, I leave it raw. cover with sauce.

Cook for 30 min or till it looks done (cheese bubling up and golden brown).
