You nailed it, as those are all great ones.
But I'd add the original Smokey and the Bandit, because of my love of the Trans Am!

Came here to say Vanishing Point (and NOT the awful Viggo verson).

Also, can't believe no one said Gone in 60 Seconds (again, the original version).

The one in "We Own the Night" was pretty good.

The one in Bullit is the standard that all others try to stand up to.

The new Jack Reacher movie with Tom Cruise had one that was pretty good, not as classic or epic as some of the previously mentioned ones but definately great.

Don't laugh, the one in "The Peacemaker" with George Clooney is great.

If you haven't seen it, here's the Cliff's Notes:

George Clooney is a special forces/CIA spy type charged with securing a couple nukes stolen by a rogue former Soviet officer. He is saddled with Nicole Kidman as the nuclear scientist window dressing. They go adventuring around Europe chasing down leads on the nukes.

The car chase scene starts when Clooney's character is about to meet with a well placed, well known informant in a small European city. Just before they make contact, some shadowy goons in BMW's shoot the man in cold blood. Clooney's character immediately switches into beast mode, and he proceeds to destroy a couple BMW's with the rear bumper of a Mercedes and some excellent defensive driving skills. If, by "defensive", you mean "offensive".

Skip the rest of the movie, but watch the car chase.
