Thought I'd try something new.  



Made up a small trial batch of garlic dill pickles.  Hopefully, they don't taste like crap.

Ive been tempted to start a batch of naturally fermented pickles (and sauerkraut, and kimchi)...



but they are too much like having a pet.

My mom does some similar. Lots of peppers, jalepenos, habeneros, massive amounts of garlic, small onions, etc. Damn tasty and can be rather spicy. I love them

A recipe I found online said to use apple cider vinegar.  I'd never heard of doing it that way before so I thought I'd give it a try.

Water was still hot so I just put them back in for 15 minutes.  I think it was boiling for the last 7 or 8 minutes

If they are properly sealed, how long are homemade pickles supposed to last?

My mom has some jars of pickles, baby carrots, etc. mixed together, that were made by a neighbor close to 15 years ago.

Is there any chance they are still good?

My grandmother used to can everything.  I always had free food as long as I brought the jars back.  Her basement was filled with food.  Grandparents lived through the depression and lived prepared, lived smart.

If I had a wife we'd be gardening and canning.

Butter pickles were always my favorite.

I think that is where I goofed. I started timing them when the rolling boil started again

I have been using Family Guys recipe for years.  They turn out great.  This year I made fermented pickles as well and didn't like the taste as well.  I have put up 18 quarts and am trying for 50.

Mom made dill pickles and her secret to keep them crisp was to put 2 or 3 grape leaves at bottom of jar it worked you open a jar in March and they were crisp.what i would not give to have some of them now.

Did this when I first got married, was living with my inlaws at the time. My mother inlaw was ready to have me shot after a couple weeks (words of wisdom, do not do it inside....)
