If you do a search, this was discussed about a week ago or so. There are many many references to Homer's Illiad in Brother where art thou.

Scene:  Pete, Delmar and Ulysses have been picked up by George "Baby Face" Nelson in his Model A, who is being chased by the cops.



George tells Ulysses to take the wheel while he fires his "chopper" –– Tommy gun –– at the pursuing cops, all while laughing maniacally.



Suddenly, he sees a bunch of cows in a field.  He says "Cows.  I hate cows worse than coppers" and sprays one with several .45 rounds.



At this point Delmar says "Oh, George, not the livestock".



And yes, it's funnier on film.
