Is there some sort of software that is a universal program they are all schooled on?

Sort of.
Most use parts of the Adobe Creative Suite.
Photoshop, Illustrator, etc. Depends on the designer. But Adobe products are the gold standard.

Adobe Illustrator the most, and also Photoshop. Sometimes InDesign.

Quark is gone.
It's all Photoshop, Illustratator and tiny little niche programs. (Gimp, Paint.net, etc.)

Photoshop CS5 here. I have run into situations where a customer or supplier needed files generated by Illustrator (vector), but I haven't ever taken the time to learn it.
