I present the proper way to make Texas Chili!!!



Start with Anaheims, serranos and jalapenos







Smoke for 12 hours










Now start with some bacon










And add some chuck steak










Cube and combine with LOTS of onions and of course the blended homemade chipotles










Fork test confirms it is ready!










There are no missing ingredients and of course no beans.

12 hours in the summer, longer in the fall.  I use apple, pecan and hickory wood.  Takes about a wheelbarrow full of wood for one pile of chili's.
