How is it that many of the better NFL QB's thru the years played at realtively minor colleges? Tom Brady & Johnny U are but two examples, IMO. I personally find it hard to believe that these guys made a huge leap in talent between their leaving college & their NFL rookie season. So why did the bigger football schools miss on these guys?

Some QBs might not "fit" into the schools scheme.

Not a QB but the running back for the Patriots (cant think of his name off hand) from Nebraska

got over looked by Bill Callahan and hes an excellent running back.

Its amazing how many of the top NFL quarterbacks were late picks.  The greatest quarterback of all time, Joe Montana, was drafted in the 3rd round.

Figuring out who will succeed in the NFL(or college for that matter) at quarterback is not an exact science.  Case in point: Jamarcus Russel.

Joe Money went to ND

Really?

Modern-
Peyton Manning - Tennessee
Mike Vick - Virginia Tech
Tom Brady - Michigan
Aaron Rogers - California
Mark Sanchez - USC
Drew Breese - Purdue
Matt Ryan - Boston College
Kyle Orton - Purdue
Matt Cassel - USC
Carson Palmer - USC
Sam Bradford - OU

Classic-
Joe Montana - Notre Dame
Dan Marino - Pitt
John Elway - Stanford
Bernie Kosar - Miami
Steve Young - BYU
Troy Aikman - UCLA
Joe Namath - Alabama

There are some great QBs that have come from non-powerhouse schools, but if you really want to have fun you should look at the all-time greats at RB and WR and the schools that they came from.

Recruiting is an inexact science to say the least.

If you look at the USA today, top 10 high school, four years later most of those players don't pan out.

Many players will go to the wrong school with a system that doesn't fit their skills.
...or the coach who recruited you, gets fired after your redshirt year and the new coach brings in an offense that doesn't fit your skills., you are now fucked!

Another common scenario, you were the # 10 QB in the nation, when you came out of HS, The following year your school gets the #3 rated QB in the nation, well now your fucked! This guy is the coaches darling and whether he sucks or not, the coach is going to ride with him.

Most guys will transfer to a smaller school to get PT, if the school will let them out of their commitment.

There may be a big emotional, maturation, and even physical growth say between junior/senior year.
Some guys are simply late bloomers. Some guys wake up one day during their junior/senior year and football simply starts making sense to them, the game slows down, they begin to understand it better and their passion/desire to play gets serious. Some guys just realize all of a sudden that they have the talent to go to the league if they "get serious" so they put in the work to make that happen. Sometimes it really does happen overnight, I've seen that happen.

The big name colleges aren't necessarily missing on those guys - they
just are more concerned about winning the college game than producing a
star NFL QB.  As mentioned above, not all big-time colleges run offenses geared towards the production of a successful NFL quarterback.  IMHO, you see that most obviously with the athletic running QBs - Pryor at OSU, Robinson at Michigan, Tebow at Florida, and Young at UT come immediately to mind.  Those guys (the ones who have graduated) didn't develop a good passing game in college and as a result I am less than optimistic about their chances in the NFL.  When they are somewhat successful, it's only for a few years.  Eventually they can't outrun the defense and never developed a passing game (yes, McNabb, I'm looking at you).
And even with a somewhat more passing-oriented offense, not all successful college coaches are capable of developing successful NFL quarterbacks.  Steve Spurrier comes to mind - guy is a very successful college coach, but I can't think of any QB that played for him who went on to have anything more than a mediocre NFL career.

Bigger schools/football factories recruit better talent.  That means they also recruit better lineman.  A quarterback at Oklahoma, for instance, is probably going to get hurried, knocked down and sacked less than a QB at school like Southern Mississippi.

Just saying.

In the football scheme of things, UL is indeed "small" by any means of distinction. It's only been in the last few years UL has paid any attention at all to football.

I'm afraid you're confusing "small" with physical size rather than program success/history, IMO.
