Well, my best friend has been really getting the catfish on the river.  He and I went out this evening and caught two 3 1/2lb fish, threw them back.  I love fried catfish.  I just dont know how to clean and cook these things.  These are channel cats, BTW.

1.  Use a bludgeon to kill the catfish
 2. nail catfish too a tree or wooden block
3.  make a cut from pectoral fins all the way around to the top off catfish and remove skin with pliers or channel locks.
4. remove air sack and all internal organs and remove fins.  I cut a slit from the neck to anus hole ans use two fingers.
5. chop off head and rinse down fish with fresh water.
6. dip in egg and roll in bread crumbs or panko and fry.
7.  enjoy awsome catfish by moving fork down the spine to the belly area so you don't eat the bones.

You know I'm not sure. I'll have to ask my neighbor next time I see him.

 He said to me today,

My Neighbor - "You know the difference between a Catfish and a Lawyer?"

Me - " Know, reckon I don't"

My neighbor then says,  " One's a low-life bottom-feeding scumsucker; the other's a fish."

Me- "HAHAHAHAHAA"

We stab them in the head with a stout knife, make a shallow cut around the back of the head,
cut down the belly, them pull the skin off with pliers. Clean all the innards out,
cut off the head, and if they are big enough slice of filets. Roll in cornmeal and fry.

I skin them than fillet them, and then cut the fillets into chunks for frying.  I don't eat really little ones, or really big ones.  A skinning tool makes pulling the skin off a lot easier.    3 1/2lbs is plenty big enough to cut the sides off.

'Bout covers it.  Catfish is some good eatin' , 3 1/2 lb channel cat is a great eating size.  Catch a few more and try them.

ETA:  I see you've had catfish before.  If all you've had is farm raised, river cat can be little bit stronger flavored.

Those "spears" are extremely sharp.  One summer I worked on a catfish farm and I was in one of the ponds with another guy when he screamed.  He pulled his foot out of the water and a catfish was stuck to the bottom of his boot.  That little side fin had gone through the sole of the shoe of his chest waders.  The infection was horrible.

I'm from a different camp here on cleaning catfish, and it may just be because when we clean them were normally looking at about 30-50 at a time.

so my advice may only be useful if your looking at doing this more than once.

First, pic up and electric fillet knife.  Walmart has them for like $15.


Pick up catfish from cooler, lay on table.  Cut down right behind bone. follow the backbone all the way down to just before the tail fin.  Flip the meat over and start cutting right there where you left off  to remove the rest of the skin.  Rinse repeat.

Cooking, we used to mix up our own stuff, but in the past few years we've found a fish fry mix that works well for us.  Louisiana is the brand I think, and i've seen it at most of our local stores.
