They don't.  Some do start to break down and get mushy after a couple years though.

All preserved foods lose nutrients over time. After a year or so the loss becomes significant and degrades more quickly.

Further, it's my understanding that all packaged food in the US is required to sport an expiration or "best if used/sold by" date.

I've eaten many a canned product far beyond the stated dates and I'm still typing, though.
